Now, you don't have to do anything to 'restore' the default set. So apps like TextEdit, TextMate, Safari, etc shouldn't have any trouble. On the other hand, most Cocoa apps that use AppKit's default type tools and text rendering will have no discernible performance problems having a ton of fonts. So, Word, Photoshop, Illustrator, etc definitely are slowed down. Having a lot of fonts will slow down apps which care about what fonts are available and do so at startup time.
